About this deal

I love dark chocolate but I wanted to lighten it up just slightly but I didn’t want full milk either. Some like to add oil to the chocolate chips (not melting wafers) so the chocolate won't harden as quickly. You may need to add more–it really just depends on how much chocolate you use when dipping, and that can vary. But I did discover a sweet spot that could help minimize the chances of breakage at least with this particular chocolate brand.

I decided to use a basic chocolate cupcake sponge flavoured with peppermint extract – if you don’t want the sponge minty as well though, you can just leave that out!Peel Candy Canes and either blitz in food processor or pop in a ziplock bag and bash with a rolling pin until combination of crushed and small chunks remain. Cover a baking with a sheet of wax paper, allowing the it to hang over the ends of the baking sheet. Once set remove from fridge and using hands crack the bark into smaller segments depending on what you need them more. Whatever their origins they have now firmly established themselves as an integral part of festive food and decor.

I use Enjoy Life dark chocolate morsels since they’re free of 13 major allergens including gluten and dairy (Lincoln loves this bark!After pouring and smoothing the chocolate onto the semi-sweet layer, I sprinkled the peppermint bark on top and gave the pan a bit of a jiggle back and forth to flatten things out and to cement more of the candy cane pieces into the chocolate. Sprinkle with reserved crushed candy canes then refrigerate until the chocolate has set, 20 minutes. You could even take this same idea and turn it into peppermint bark fudge or peppermint bark cookies, 2 other favorites this time of year. You simply melt some chocolate, break up some candy canes and sprinkle them on the melted chocolate.
